When Blue Baker opened in 2001, David Fox envisioned a fusion of contemporary and traditional: a fun, modern atmosphere where customers could enjoy rustic artisan breads and pastries created from scratch on a daily basis.
"Most of our breads take at least three days to make from start to finish because of the time-intensive fermentation processes we employ to extract the fullest flavor from the grains," says Fox.
To make the baked goods accessible to a wider audience, Blue Baker began serving sandwiches on their breads and using the brick oven to make pizzas from handmade dough. Response was overwhelming.
"We are extremely honored and grateful for the support we receive on a daily basis from our customers and vendors," says Fox.
Each year, Blue Baker's menu and services have expanded, growing to include catering and delivery and the addition of a breakfast menu. The most significant expansion occurred in 2007, when Blue Baker opened its second location on University Drive. Despite its rapid growth, Blue Baker remains committed to its original vision of quality.
